Recipe: Layered Iced Latte With Cold Foam

Summer is (un)officially here in the northern hemisphere and it’s the perfect time to put some new cold drinks on your menu. Starbucks reports that 75% of their summer drink sales in the United States are cold coffee drinks.

Does your menu need a new option for summer? This elegant layered espresso drink could be just the drink. Topped with cold foam, which is the perfect “canvas” for a summer-themed Ripples print, you can make your own beautiful mark with this trending summer drink.

Equipment:

  • Espresso machine
  • Cold foam blender (such as a specialized frother or a high-speed blender capable of creating cold foam)
  • Tall, clear glass
  • Bar spoon
  • Ripple Maker coffee printer

Ingredients

  • 2 shots of espresso
  • Ice cubes
  • 120 ml of cold milk (whole milk recommended for a richer foam)
  • 2 tablespoons of simple syrup (optional, to sweeten the foam)
  • A few drops of vanilla extract (optional, for flavoring)

Instructions:

Step 1: Brew the Espresso

Pull two shots of espresso. Allow them to cool slightly, or pull them directly over a few ice cubes in a cup to chill them quickly.

Step 2: Prepare the Cold Foam:

In your cold foam blender, combine 30 ml of cold milk, simple syrup, and vanilla extract. Blend until the milk is frothy and has a smooth, creamy texture that holds its shape. The cold foam should be airy yet stable enough to float on top of the drink.

Step 3: Assemble the Drink:
  • Place a generous amount of ice cubes in a tall, clear glass.
  • Slowly pour the chilled espresso over the ice, ensuring it forms a solid dark layer at the bottom.
  • Next, carefully pour the remaining 90 ml of cold milk over the back of a bar spoon to let it gently layer above the espresso without mixing. The slow pour helps maintain the distinct separation between the espresso and the milk.
  • Finally, spoon the cold foam over the milk. Take care to distribute it evenly so it forms a neat white layer on top, and ends at the brim of the cup.
  • Top with your favorite Ripples print and enjoy your coffee with latte art!
